- Make ready Coriander 1/2 cup washed and chopped roughly. Puréed together with spinach
- Get 2-4 green chillies
- Prepare 1/4 cup curd
- Make ready 1 tsp garam masala
- Get Whole spices (black pepper, bay leaf, big cardamom, 1” cinnamon stick, 2-4 cloves)
Diwani handi is similar to mix veg in the north India. Boiled vegetables are cooked with ginger garlic paste and served with hyderababdi parantha. This veg diwani handi is a rich, creamy curry made with mixed vegetables. For this veg diwani handi, the gravy or base is made from cashew paste, onion-tomatoes and cream.
Steps to make Diwani Handi:
- Take butter in a pan, add whole spices and then add onion, garlic and ginger.
- When roasted for a few minutes, add veggies and keep stirring.
- Add spices and cook for a couple of minutes more till aroma starts coming.
- Add curd and spinach coriander green chilli purée.
- Keep on low flame and let cook. Add cottage cheese and garam masala after a couple of minutes. Mix the vegetable equally in the gravy.
