- Wash ivy gourd and remove the tip and tail ends. Cut in round slices and soak in water.
- Heat up the oil in a pan on medium flame. Add mustard seeds and hing. Once the mustard seeds splutter and spices like red chilli powder, coriander cumin powder and turmeric powder.
- Mix well spices and cook for a minute. Add sliced ivy gourd and salt. Mix well. Cover and cook till ivy gourd is cooked completely stirring occasionally. Switch off the flame.
- Garnish with chopped fresh green coriander leaves and serve hot with roti and rice and dal.
