- Slice the daikon and soak in a bowl of water.
- Spread the shirasu on a tray evenly. Microwave the tray without covering with cling film. Shake the tray occasionally to mix the shirasu and repeat the process several times.
- It is done if the shirasu takes on a crispy colour like in the photo. I microwaved and watched over as it cooked.
- Make a dressing by mixing ponzu sauce and sesame oil. Oour the dressing just before eating.
- Drain water from the sliced daikon and serve them on a plate. Place the crispy shirasu, dried bonito flakes, sesame seeds, nori, and young green scallion cut into small pieces on top. Pour the dressing.
This salad uses daikon radish, also known as mooli, for its lovely crisp texture which gives the dish added crunch. Peel and slice the daikon into thin strips. Soak in ice water for a while to make it crispy. Drain well and squeeze to get rid of any excess moisture. Daikon radish is a common vegetable in Asian.
