- Take 3 Cups Water

Steps to make Beetroot Pulao:
- Grind the last four ingredients to a paste and keep aside. Do not add water.
- In a large pan add 2 tbsp of oil and the rice. Saute till it turns opaque. Move this to the pressure cooker.
- In the same pan, add 2 tbsp oil and add cloves,cinnamon sticks,star anise,cardamom pods and green chilli. Saute it for 3-4 minutes.
- Now add the paste (Step 1) to the above and saute well till the raw smell is gone.
- Add the chopped shallots, saute for few minutes. Then add chopped tomatoes to it.
- Once they are half way cooked, add the grated beetroots and mix all well.
- Allow it to cook for 6-8 minutes. Add chilli powder, garam masala and salt to the above.
- Now add the masala to the rice. Add 3 cups of water and allow it to cook for 20 minutes or 2 whistles.
- Beetroot Pulao is ready to be served.
