- Mix quinoa, salt, and eggs in a large bowl
- Stir in the chives, cheese, garlic, and spices
- Add bread crumbs until the mixture is firm enough to form into patties
- Make approx. 12 patties. Smaller is better
- Heat oil over medium low heat in a frying pan
- Cook ~6 patties at a time, 7-10 minutes per side (until golden brown)
- Remove the cooked patties, place on a wire rack to cool, and cook the rest
They can be served as appetizers, a side or on top of salads for protein! Put the quinoa in a saucepan and pour over the hot stock. These quinoa patties were hard to photograph and I almost didn't post this recipe because of it. I put a picture on instagram and it received this overwhelmingly positive response, which encouraged me to. To me, the most important part of a sandwich is the patty (or veggie "meat", or whatever you're going to use for protein).
