Steps to make Puliyogare Puliyodharai Tamarind Rice:
  1. For Tamarind Masala Powder: In a Frying Pan : Take 1 tbsp of Sesame Oil & Dry Roast: All the aforementioned ingredients for the same & let it cool down before grinding it to a smooth paste, in a blender jar & set aside
  2. Take a Frying Pan : Add 3 tbsps of Sesame Oil & add into it- One by One Mustard Seeds, Urad & Chana Dal, Black Peppercorns, Curry Patta, Fenugreek and Sesame Seeds, Hing & Dry Whole Red Chillies Coriander Seeds, Peanuts, Turmeric Powder to sauté well until nicely blended & combined
  3. When it releases nice aroma then, add in the Tamarind Purée & mix well, also add in the salt & jaggery (to balance the sourness), sauté & bring to a boil- once starts boiling, reduce the flame to medium-low & cook for about 10 mins time until the raw smell of the Tamarind goes off
  4. Now, it becomes quite richer & thicker in it's consistency and that’s how it should be…Take a large serving plate/bowl- Add in it the Cooked Rice & then, pour in it- a few servings of this freshly made Tamarind Gravy…
  5. Give it a nice mix & allow it to sit for about half an hour’s time to the aroma of the Tamarind Masala Gravy well incorporated into it… Our Tamarind/Puliyogare/Puliyodharai Rice is ready to be served hot and deliciously decadent & aromatic
