Bottle gourd, known as lauki (ghiya) in Hindi and Dudhi in Gujarati, is generally not a popular vegetable in every household but it makes one of the best Indian curries - Lauki Kofta Curry in which deep-fried koftas (round shaped deep fried spicy dumplings) made of grated bottle gourd, gram flour. Bottle gourd (lauki/ghiya) is one of those vegetables that youngsters run away from. Some of us find it very bland in taste. - Wash and peel ghiya cut in roundels about 1 " thickness
- In a wow keep water to boil by adding 1 tsp of salt add the roundels to boil for 5 minutes so they get little tender and soft not much
- Take out all gently on a plate and from middle discard the seedy part so hollo it
- For stuffing boil potatoes and mash them add mashed paneer finely chopped onion mix spices and coriander leaves you can add finely chopped cashew nuts and chopped raisin too
- Stuff this mixture in hollo part of ghiya
- On a nonstick pan put 1 tbls of oil and shallow fry or tava fry grill fry any one all stuffed ghiya roundels
- When both the sides get golden brown in colour take out on a paper napkin
- For gravy in a pan add oil and saute onion paste adding little salt when it turns little brown add ginger garlic and green chilli paste saute for 5 minutes add turmeric powder mix well add other dry spices
- When nicely roast all spices and mix well add blended curd and stir continuously when pan leaves oil add ghee
- Give nice mix adjust consistency of gravy by add the water you can use the broth in which you have blanched the ghiya
- Gravy is ready arrenge roundels in serving plate at the time of serving heat the gravy and pour above the plate garnish with cream
