- Prepare 1 cup grated partly boiled potatoes

- Take 1 tsp cinnamon powder

- In mixing bowl, take the grated potatoes and pumpkin.
- Add green chillies to it. Then add the spices. Cinnamon is best buddy of pumpkin.. They work like magic together. Trust me. Mix everything.
- Now, add in the besan remember, to put more if needed, the batter needs to be a little more tightly binded. As pumpkins release water so add water if needed other wise keep aside for 5 mins and you will get a perfect batter.
- Now, mom's trick, in a kadhai take oil of your choice (I used mustard oil cuz I love its sharp taste in my pakodas) and when its heated properly add a lil bit of it to your batter. Mix.
- Now, release the pakodas carefully in the hot oil. Keep an eye so that they dont burn, press them a lil when half done. Take them out on tissue.
- Sprinkle a pinch of cinnamon on top of them and Serve hot, with your favourite sauce or chutney, I served it with Kasundi sauce and peri peri sauce.. both went really well with it. Enjoy!
