Steps to make Baigun bodi(brinjal in dried lentil dumplings):
- Cut brinjal and keep aside
- Soak lentil dumplings (baadi)in water for 5-10 mins
- Make a paste of onion,garlic, cumin seeds and peppercorns.
- Heat oil in a kadhai/pan.Add five spices and let it crackle
- Now add the masala and keep stirring for 1-2 mins,then add turmeric powder,red chillli powder,salt and mix the masalas nicely until the raw smell goes away.
- Now add the dumplings in the masala and let it cook for 4-5 mins on low flame.
- Remove the dumplings and then add brinjal in the same masala,lower the flame and let it cook for 4-5 mins.
- Add peas and little water and wait for the brinjal to cook properly.You can check with a knife.Then add chopped green chillies and coriander leaves.Serve hot with steamed rice.
Brinjals marinated with some aromatic spices and fried to perfection are a must-try. Take two eggplants and clean them well. Slice them in half inch thickness and marinate with ginger. the potatoes when cooked with brinjal and generally avoid eggplant when served. but its just me and you may like both as my husband prefers the other way. in addition to these, you can make this curry in a thick tomato and onion based gravy. thus making similar to.
