- In a large bowl, whisk together the pancake mix, egg, and milk to form a smooth batter with lumps. Warm the chocolate spread for about 20 seconds in the microwave and keep it aside. Heat the ebleskiver pan and brush it with melted butter. Once the pan is warm, spoon about 1 tbsp of the batter into each well. Dollop about 1/2 tsp of the chocolate or pistachio spread into the center of each well.
- Fill it up with enough pancake batter to seal the pancakes closed. Once the surface begins to bubble, gently flip the pancakes using a fork and a spoon so that the cooked side is facing up, and cook for another 1-2 mins or the bottom turns golden brown. Repeat until all the batter is used up. Transfer the pancake balls into a plate. Serve immediately and enjoy.
I've stuffed mine with blueberries and cookie butter. These Danish pancakes have a light, airy batter, and a sweet-tart Lingonberry jam filling. Serve them hot with a dusting of confectioners' sugar on top. Put ebelskiver pan over medium high heat. That is real chocolate oozing out of those mini pancakes and I think it's always a good time for pancakes guys.
