Heat ghee in a kadai, add grated carrot saute until it shrinks. Add mashed dal along with cane sugar.the mixture will turn goey. After soaking Moong Dal will be double in volume. Add the cilantro and dressing to the carrot and moong dal, mix it well.
Steps to make Moong dal carrot idli:
- Soak the rice, moong dal and urad dal in a deep separate bowl with enough water for 5 to 6 hours.
- Drain and grind them seperately. While griding Urad Dal mix Green Coriander,Ginger,Garlic in it and mix it with Rice and Green moong dal paste.Add some fenugreek seeds on it which will be helpful in fermattaion.Cover and let it ferment for 5-6 hours.
- After 5-6 hours you can see that batter has been nicely fermentated.Remove the fenugreek seeds. Add grated carrot & salt as per taste and add water if needed. Add 1tsp Fruit Salt and mix it well in one direction.Please make sure batter should be thick like idli batter.
- Grease the idli moulds and pour some the prepared batter into it.Steam the idlis in an idli steamer and steam for 15 minutes or till idlis are cooked.Let it cool slightly and demould it. Serve it hot.
