This mildly flavored rice dish is known as matar pulao or pea pulao and it is so easy to make. The caramelized onions, aromatic spices and the sweetness In the spring and summer time, I'll serve this pea pulao as part of a simple meal alongside this tomato stew (I skip the blending and leave it "rustic". - Add ghee to the hot Cooker pan. Throw in cumins,cloves,cinnamon, cardamom bay leaf.
- Once they start to splutter add Onion,green chillies,grated ginger and saute.Add cashews and saute until they turn golden brown in colour.
- Add Cashew paste and give it a nice stir. Cook in a medium low flame.
- Now add Matar,stir well and cook for about 2 minutes.
- To the matar add soaked rice, stir them and cook for one minute.
- Now add water,lemon juice, garam masala, required salt. Give everything a good stir and pressure cook for one whistle.
- Garnish with some Coriander and mint leaves. Done!!!
You can have any tomato based gravy or just onion pachadi as side dish for peas pulao.
