Sabudana vada or Sago vada is one of the popular Maharashtrian recipes made during Navaratri fasting(vrat). Sabudana vada with peanut chutney is one of the most popular vrat / fasting dish in North India. I am sure most of you would look for no onion no garlic fasting recipes. Steps to make Sabudana or Sago vada:
- Wash sago well and soak it over night with little water. The next day morning, all water should have got absorbed by the sago and it will be soft.
- Combine all the ingredients and mix well, divide in a equal portions, make balls press with the help of palm, make a round cutlet shape.
- Heat the oil in a pan and fry the vadas on a medium flame till they turn brown in colour. Drain on absorbent paper.
- For chutney: Take all the ingredients into the blender or grinder with very little water, Grind into the smooth paste (add water if required).
- Serve Sabudana Vada with Green chutney.
Sabudana Vada has many names for it, i.e. The Tapioca sago is small white balls made from the tapioca root which in India is called Sabudhana or Sabakki.
