Instructions to make Sumptuous Ragda Pattice:
- Pattice:Wash potatoes, boil, peel and smash them. Add salt and sugar to taste. Add one tablespoon lemon juice and mix well. Add corn flour to bind the smashed potatoes and shape them into medium sized balls. Flatten them into round pattices.
- Frying the pattices: Heat oil in a shallow frying pan and fry the pattices till they are golden brown in colour and crispy.
- Tadka: Warm oil in a pan. Add mustard seeds, asafoetida(hing) and finely chopped green chillies. Add this to the batch of smashed potatoes.
- Ragda: Warm oil in a pan. Add cumin seeds, asafoetida, mustard seeds and chilli ginger garlic paste. Add finely chopped onions and stir fry. Add tomatoes once onion is golden brown in colour.
- Ragda:Add boiled green pees in the pan. Add turmeric powder, chilli powder, garam masala and coriander powder.Add lemon juice, salt and sugar to taste and stir well.
- Assembling Ragda pattice : Place the warm pattices in your plate and pour hot Ragda over it.
- Garnish: Garnish your meal with sev and chopped onions. (You can also garnish with coriander,green chutney and imli chutney)
