- Take 400 gm bathua (blanched)

Mash the water-free saag until coarsely ground. Add makki atta and stir the blend. Remix the filtered saag water, along with a little drinkable water, and start cooking again over a low flame.
Steps to make Bathua Saag and kadi:
- In a pressure cooker/pan add nicely washed bathua and cook for 1 whistle. (you can boil in a pan too).strain and let it cool.after cooling add in a blender jar and blend it coarsely.keep aside.
- In a pan heat oil, add cumin seeds when they crackle add garlic and stir until light golden,add ginger and stir again.add tomatoes, green chilles and salt saute well and cook covered for few mins.on low to medium heat until tomatoes gets soft.
- Add turmeric powder, red chilli powder,coriander powder,stir add blended bathua and cook for 3 -4 mins.on low flame or until oil comes on surface.bathua saag is ready.
- Bathua saag is ready.Now for making bathua kadi – in a deep mug add curd, gram flour, salt,red chilli powder and turmeric powder.whisk well with whisker till smooth.add 2 -3 cup of water and whisk again nicely.Kadi batter is ready.
- Add prepared curd + gram flour batter (Prepared kadi batter) to the saag, keep the flame high and stir continuously until it comes to a boil.reduce the heat and cook on low flame for 8 - 10mins.
- Bathua kadi is ready.serve both with roti or with rice.
Add finely chopped green chilies and ginger, and let the heat do its work. Pluck the leaves of bathua saag and sarson saag and then wash them thoroughly. Put both bathua and sarson in a karahi and cover the lid. Cook on low flame till they become tender. Once the saag has become tender put off the gas and let it cool.
