The ingredients needed to make Sindhi curry:
  1. Get 1 cup oil
  2. Make ready 1 cup besan
  3. Get 1 tsp methi seeds
  4. Prepare 2 potatoes
  5. Make ready 100 gms suran
  6. Take 50 gms gavar
  7. Make ready 100 gms ladies fingers
  8. Take 2 drumsticks
  9. Make ready 2 tinda
  10. Make ready Small cauliflower
  11. Make ready 50 gms peas
  12. Make ready Small brinjal
  13. Get 1 ball tamrind soaked in water
  14. Prepare 5-6 kokum
  15. Prepare 5-6 aambel/ mango flowers
  16. Get 1 tsp salt, red chilli powder, turmeric, jeera and hing
  17. Make ready 1 inch peice ginger grated
  18. Get Curry leaves and corianderleaves

Sindhi Kadhi Recipe is a smooth, silky curry with vegetables and it is made by gently roasting besan or chickpea flour and adding a mixture of dal and vegetables to it. Usually an assortment of vegetables is added, this recipe uses okra which is predominantly added to Sindhi Kadhi. It has a flavour palette of tangy, sweet, sour tones and makes a delicious, comforting gravy.

Steps to make Sindhi curry:
  1. Heat a thick bottomed kadhai. Add oil and methi seeds.
  2. After a minute add besan and keep it stirring for 10 minutes till it is fragrant and golden brown in colour.
  3. Add 2 cups water and blend it well so that there are no lumps. Add 2 more cups water. Keep boiling it.
  4. Add all the vegetables except drumsticks.
  5. Cook it covered for 10 minutes. Then add drumsticks, salt, turmeric and red chilli powder.
  6. Once all the vegetables are tender after cooking for 7 or 8 minutes, add tamrind pulp, kokum, curry leaves and aambel. Boil for 3 minutes more
  7. Season it with 2 tsp oil, jeera and hing. Switch off the gas and sprinkle corianderleaves.
  8. Serve hot with steamed rice.
