  2. SAUSAGES: Heat 2 Tbsp of Olive Oil in a large pan/wok until hot. Add 1/2 of the Onions, and fry until fragrant (10 sec). Add the Sausages and fry them until brown all over. Remove and set aside.
  3. SAUCE: Heat another 2 Tbsp Of Olive Oil until hot. Add the remaining Onions, Garlic and fry them until fragrant. Then add the Carrots, Celery and fry them for a few minutes. Next add the Tomato Paste, Water/Stock, Sugar and cook them until the Sauce is reduced slightly.
  4. ASSEMBLY: add the Sausages and Pasta to the Sauce, stir and mix well. [OPTIONAL, you can add greens here, mix well]. Then add the Cheese and mix well. Lastly add the Oregano or Thyme and mix well.
  5. SPAGHETTI: if you're using Spaghetti, then during ASSEMBLY, add all the other ingredients except the Spaghetti. Instead, serve the Spaghetti in a plate and pour the sauce on top.
