Choshi are nothing but hand rolled semai or kind of rice pasta which are sundried, lightly fried in ghee and then simmered in boiling milk till it become creamy and rich. - Prepare To make Choshi:-
- Make ready 100 gram gobindobhog rice
- Make ready 1 tablespoon semolina
- Make ready 1 pinch salt
- Prepare 1 cup hot water

- Get 1 cup choshi
- Make ready 2 liters full cream milk
- Make ready 300 gram sugar
- Take 1 tablespoon ghee
- Take 1 teaspoon green cardamom powder

Among the myriad things I saw was Chushi or Choshi Pithe - small rice shaped dumplings made with either white flour or rice - used in payesh. Steps to make Choshi Payesh:
- To make Choshi:-Wash rice 2-3 times under running water and sun dry the rice completely.This will take around 2 days to completely sun dry the rice.
- Now make a fine powder of the rice.
- Take 100 grams of rice powder and 1 tablespoon semolina in a bowl along with a pinch of salt and mix thoroughly.
- Now add 2-3 tablespoon hot water and start kneading.
- Add water little by little to make a tight dough.
- Once the dough is prepared cover it with a wet cloth and give rest for 15 minutes.
- Now take a pinch size dough and using your finger give it elliptical shape.It should look like a rice grain both in size and shape.
- Following the same process make rest of the 'Choshi'.
- Once prepared,sun dry the Choshi completely.
- To make Choshir Payesh:-Heat ghee in a kadai and fry choshi until golden.
- When done keep them aside.
- Now take milk in a deep bottom pan and start boiling it till the milk reduces to 2/3.
- Once the milk reduces to 2/3,add 1 cup of choshi to the milk and keep cooking on low flame.
- Cook until the milk thickens and choshi turned soft.
- Add sugar and mix thoroughly and cook for 5 minutes.
- Sprinkle green cardamom powder on the top and switch off the flame.
- Give a nice stir before serving.
- 'Choshir Payesh' is ready to serve.
