- Get 3 Bitter gourd
- Take 4 tsp Roasted groundnut and sesame seeds powder
- Get As needed Salt red chilli powder turmeric coriander powder
- Make ready 2 Tbsp each Tamarind extract and jaggery
- Get as required Oil and jeera mustard seeds
- Take Pinch Asafoetida
We telugu people amkes variety of dishes using this karela like fry,curry and this pulusu. Pulusu means where the main vegetable is cooked in tangy tamarind. Add the cooking oil to the wok and also the black gram, fenugreek seeds and mustard seeds. Add the turmeric, salt and the tamarind concentrate.
Steps to make Bitter gourd in tamarind gravy:
- Cut the bitter gourd in small squares.
- Parboil it with salt and pinch of turmeric powder
- Now heat two Tbsp oil in a pan add asafoetida and mustard jeera seeds. Let it crackle
- In this add bitter gourd let it fry well
- Now add all the spices roasted powder and fry for some time
- Add water tamarind and jaggery and bring this to a boil. Boil it well till you see oil floating on the gravy
Add enough water to cover the ingredients and continue to cook on medium fire. Now add chopped onions & green chillies and fry them until golden brown color. Add the chopped sorakaya pieces, turmeric, red chilli pwd & salt. Add the juice extracted from tamarind plus some water.
