The bitter leaves used for this soup ,are properly washed and squeezed ,until there is only a slight taste of bitterness left. Then add the bitter leaves, stir, taste, add more salt if necessary then cook for three to two minutes and you are done with the making of Nigerian Bitter Leaf Soup (Ofe Onugbu). Instructions to make Bitter leaf soup:
  1. Cut and wash bitterleaf,wash wit salt to remove excess bitterness
  2. Add in ur red oil,add in ur blended tarugu, tattasai,onions,garlic,and, ginger, give it a fry till done.add water den ur seasonings, curry,meat or fish allow it to boil.
  3. After d water has boil add in ur grounded groundnut to thick d water den add in ur washed bitterleaf to boil wit d water cos bitter leaf is hard to cook.
  4. Allow it to cook until ur soup thickens
  5. Ur soup is ready u can eat with any swallow of ur choice or it can be taken like dat it cures lost appetite

Blend the crayfish alongside red pepper and set aside. This version of bitter leaf soup, requires some special ingredients like ogiri, and a thickening agent usually boiled and pounded cocoyam, achi from the Brachystegia eurycoma plant or mkpuru ofo from the deuterium macrocarpum plant.
