- Take 3 tbsp oil

- Get 1 cup tamarind water

- Get 2 tsp oil
- Get 1 onion, thinly sliced

- Take 1/4 tsp cumin powder / jeera powder
- Prepare 1 tsp kashmiri red chilli powder / lal mirch powder
- Get 1/2 tsp garam masala powder

- Take 2 tbsp sesame seeds / til
- Get 1/2 cup coconut, fresh / desiccated / dry
- Take 1/4 cup peanuts / groundnuts, roasted & peeled
- Get 1 tsp kashmiri red chilli powder / lal mirch powder
- Prepare to taste salt
About Bagara Baingan Masala Recipe: A traditional Hyderabadi dish served with most of biryanis. This is also popularly prepared in the Andhra region and called as Gutti Vankaya. Hyderabadi bagara baingan recipe is the masala paste which is made of peanuts, coconut, roasted onions and sesame seeds with fried brinjals into the curry. Baingan Masala is a North Indian recipe made using small brinjals stuffed with masala.
Steps to make Baigan Masala:
- Firstly, take the cut brinjal and stuff the prepared stuffing and fry on medium flame with 3 tbsp of oil.
- Cover and simmer for 2-4 minutes or till they are half cooked.further, take off and keep aside.
- Now in the same kadai add mustard seeds, methi and curry leaves. - allow to splutter.
- Further add onions and saute well. - also add prepared onion-tomato paste and continue to saute.
- Furthermore, place the stuffed and fried brinjals and pour tamarind wate add a piece of jaggery.
- Mix gently, cover and simmer for 5 minutes.
- Stir occasionally and cook till the brinjal gets cooked completely.
- Finally, serve baingan masala with chapathi or roti.
