Take Bottle Gourd and dice into cubes as shown below in picture. Heat the oil into pressure cooker, add cumin seeds and green chillies. Bottle gourd, Lagenaria siceraria, is a genus of tropical and subtropical vines in the Cucurbitaceae family. It is also called Calabash Gourd, Trumpet Gourd and Long Squash.
Instructions to make Bottle Gourd Rice:
- Heat a pressure cooker with oil and ghee and temper with whole spices.
- Add onion and red chilly. sauté until it becomes very soft.
- Add ginger garlic paste and sauté until raw smell goes.
- Add coriander leaves and mint leaves. Sauté for few mins. Add tomato and sauté until it becomes soft. Add red chilly powder and salt.
- Add bottle gourd and sauté for few mins. Add water and mix it well. Add rice and finally add few lemon drops. Close the lid and pressure cook for 2 whistles.
- Serve with any raita.
