I specifically prepare the Nigerian party jollof rice which I still feel is one of. Instructions to make Chicken jollof rice:
- Soak the rice for 2hrs to get good result..or parboil the rice and keep aside.
- Wash and grated the peppers,fresh tomatoes and slices the onions. Keep it aside too.
- Already you have marinated boiled and fried your chicken… Keep the chicken stock aside because you will need it.
- Place the pan/pot on fire,add the oil when hot add the slice onions sauté for 1mins and add the curry,thyme,ginger and garlic.. Also sauté for 1mins.
- Pour in the grated peppers,tomatoes and sachet tomatoes paste fry it for like 5-7mins.
- Pour in the parboiled rice stir it well add water and chicken stock…give it 5mins before adding the salt, seasoning cube and mixed onga..stir well.
- Add in the green pepper,carrot, green beans and fried chicken…stir it again and cover it till done,then off the flame.
- When its done,you can slice onions and add to the rice.. the steam of the rice will cook it.And enjoy with salad.
