  6. Add turmeric powder and asafoetida and give it a stir. Add ginger garlic paste and stir it well.
  7. Add curry leaves. Saute the mixture for a few seconds and then add mashed potato mixture to it. Fry it.
  8. Make small balls out of this mixture.
  9. In another bowl, add turmeric powder, red chilli powder, asafoetida,salt, and besan. Add water and whisk the mixture. Make a smooth and medium thick batter.
  10. Heat oil for deep frying. Keep the flame to medium. When the oil becomes hot, take a potat vada and dip it ib besan batter.
  11. Evenly coat the vada with batter and gently place it in hot oil. Don't add all vadas at a time.
  12. Deep fry the vadas till it turns golden brown on both the sides.
  13. Keep the fried vadas in tissue paper to soak the extra oil out of it. Serve it with chutney and fried green chillies.
