Heat oil in a frying pan. Fry the potato ballls from all sides until crisp and golden. Potato croquettes are fried potato rolls, coated in breadcrumbs, crispy from outside and soft from inside. In Indian potato croquettes are called aloo chop or potato chop.

Peel and cut potatoes into cubes.Boil or pressure cook them till soft but not mushy.Strain out excess water and mash while it's still hot.Heat 2 tbsp oil and fry dry red chillies and crush them.Sprinkle cumin seeds.When they crackle,add grated ginger and chopped onion and fry till light brown.Mix red chilli powder,chopped green chillies,chopped coriander and roasted cumin seed powder and mash well.Add this mashed potato to the frying onion and toss all till well fried.Set aside to cool.
  2. Divide the potato mix into equal patties and flatten.Make a batter of gramflour or besan.Add salt to taste.Then add rice flour,red chilli powder,turmeric,baking powder,a pinch of baking soda,ajwain,hot oil and mix.
  3. Add water to make a thick batter and beat well so that no lumps are there in it.Heat oil in a pan.Dip the chops in the batter and fry on medium heat till nice and crispy golden brown.Serve famous street food of Kolkata Aloo Chop with Muri and green chilli.
