Steps to make Ukadiche Modak - Made with Rice Flour, Jaggery and Nuts:
  1. In a pan, add a spoon of ghee and roast almonds and cashews slightly. Then add raisins and dates. Cook on slow till the mixture becomes soft.
  2. At last, add grated coconut, mix well and switch off the pan. Keep aside.
  3. To make mawa - take a pan, add milk and ghee and let it come to a boil. Now add milk powder and stir continuously on very low flame till it becomes solid. Add this to the nuts mixture. And keep it aside.
  4. Now in a pan, add 1.25 cup water, 1 tsp ghee, 1/2 tbsp salt and let it come to a boil. Now add rice flour slowly while stirring on a low flame.
  5. When all the flour is mixed properly and it is like a loose dough-like, switch off the flame. And let it cool.
  6. After it cools down, take a small portion, grease your hands and make s small ball with your hands, now flatten it and keep a spoonful of filling in center and fold by making pleats and rolling.
  7. Steam the modaks for about 4-5 minutes. Your delicious Ukadiche Modaks are ready.
