The ingredients needed to make Ukadiche (Steamed) Modak:
  1. Make ready 1 cup rice flour
  2. Make ready 1 - 3/4 cups water
  3. Take 1 cup coconut freshly grated
  4. Prepare 3/4 cup jaggery (either powdered or broken into small chunks)

Modak are steamed dumplings with an outer rice flour dough and a coconut-jaggery stuffing. These sweet dumplings are also known as Ukadiche Modak in Marathi language. Steps to make Ukadiche (Steamed) Modak:
  1. For the filling take a kadhai or heavy bottom pan on medium heat and add 1 tbsp ghee to it.
  2. Once ghee is slightly hot (make sure it does not get too hot and smoking) add the poppy seeds. Stir them until they slightly change colour i.e. just about 10-20 seconds.
  3. Now add the coconut and jaggery and cook until the jaggery is all melted and water evaporates and the mixture comes together. Do not over cook else jaggery will harden on cooling.
  4. Add the cardamom powder and nutmeg and keep aside for cooling
  5. For the outer cover, put the rice flour in a deep bowl and keep aside. Boil the water and add the boiling water GRADUALLY to the rice flour. Keep stirring constantly with a wooden spoon or I like to use a spatula. Mix well until all the lumps are broken.
  6. Once all the water is used up it will come together like a dough ball. Now use your hands and bring the dough together and keep covered for around 10-15 mins
  7. Now make 21 small lemon sized balls from the dough. But keep the dough and the balls covered at all times to avoid drying. I also like to make exactly 21 portions of the filling too so that all modaks are equally filled. comes to approx. 1 tsp filling for each modak.
  8. Apply ghee to your palms and roll 1 ball in your palms to smoothen the cracks and gently flatten the ball to form a circle almost as big as your palm. Take care to make it even thickness all around, this helps later after the filling.
  9. Now add the filling (approx. 1 tsp.) into the covering. Pinch the cover at 5 places to form a bowl kind of shape and gently close it to form the modak shape.
  10. Once all modaks are ready steam them covered for 12-15 mins in a steamer. After steaming open the lid and let them settle for 2-3 mins before serving. They taste best with a little melted ghee poured after slightly breaking open the modak.
