DRY Flour, sugar, and baking soda are mixed together to create the dry portion for this cake. EGGS This recipe uses eggs to mix with the dry ingredients for the cake batter. PINEAPPLE This cake is bursting with pieces of crushed pineapple. Canned pineapple or pieces of fresh pineapple will both work great!
Steps to make Pineapple cake:
- Take a bowl and seive maida,baking powder,baking soda,salt.sift dry ingredients 3 times to get sponge cake. Separate egg yolks and egg whites.in a bowl add all egg yolk and mix it well.then add vanilla essence and mix it.then add milk and oil again give a nice mix.then add 1/2 of sifted flour into beaten egg mixture and gently fold using spatula.add remaining flour and fold it nicely.in another bowl add all egg whites beat it then add sugar little by little till it become fluffy.
- Then add little by little of egg whites in to egg yolk mix and fold it gently dont over mix it.pour into baking tin greased with little oil and butter paper.tap 3 times to remove air bubbles.pre heat oven 180 c for 10 minutes.then bake the cake for 30 to 45 minutes.
- Pineapple syrup:In a pan add 1 cup sugar 1/2 cup water let it boil then add 2 cups of pineapple slices.cook it for 20 minutes add 2-3 drops of yellow colour.switch of the flame and strain it.in one bowl add pineapple syrup another bowl cooked pineapple slices.beat the whipping cream till it become stiff.
- Cake frosting: remove the butter paper.cut the cake in to two.place a cake board on turn table apply some whipping cream.first layer of the sponge cake and apply some pineapple syrup then add some cream level using a scrapper.then add some pineapple slices.place the second sponge cake apply pineapple syrup then spread the cream crumbs coat refrigerate it for 30 minutes.after 30 minutes apply second coat level it.then apply pineapple glaze and garnish it with pineapple slices.
