- In a kadai, add oil. Once oil gets heat, add mustard seeds, cumin seeds and coriander seeds. Fry it.
- Add onions, curry leaves and green chillies. Saute till onions becomes translucent.
- Add tomatoes, brinjal and garlic. Saute well.
- Add turmeric powder, chilli powder and salt. Saute for 2 mins.
- Add required water. Cover and cook for 15 to 20 mins in medium flame.
- Take out the kadai from the flame. Mash the gravy well when it's hot. If it cools down you cannot mash it properly.
- Garnish with coriander leaves. Transfer to a bowl.
- Now it's ready to serve. Serve with idli, dosa and paniyaram.
