- Soak tamarind in water. Dry roast fenugreek seeds and powder.
- Keep all ingredients ready. In a pressure cooker, add gingely oil and mustard seeds wait till it cracks. Soak the curmt brinjal water to avoid discoloration.
- Next add cumin seeds and pepper followed by onion and curry leaves. Saute till golden brown.
- Add ginger and garlic paste saute till raw smell disappears.
- Then add chilli powder and turmeric powder.
- Add tomatoes and cook till mushy. Add the brinjal, salt and mix well.
- Add the tamarind extract and the crushed fenugreek powder. Pour ¼ cup water(100ml approx).
- Cook for 1 whistle and lower flame and keep for 3 minutes. Finally garnish with coriander leaves.
