- Cook soya chunks in hot water by adding little bit of water. Strain it once cooked
- Heat oil in a cooker add fennel seeds, bay leaves, cloves, cardamom and cinnamon stick
- Now add onions and fry till the onions turn golden brown.
- Now add green chilli and mix it and then add ginger-garlic paste.
- Next, add pudina and coriander leaves and mix it well for a minute. Next add tomato and stir it.
- Now add brinjal and mix it for a minute and then add soya chunks mix it.
- Add curd and mix it. Then add chilli powder, coriander powder, salt, turmeric powder and garam masala.
- Add one cup of coconut milk and two cups of water and once the water starts to boil add rice.
- Add one tsp lemon juice and mix it.
- Pressure cook it for two whistles in high flame.
- Serve it with raita
The rice is cooked in coconut milk instead of water which gives it the rich flavour. Thengai Paal Sadam is a flavorful rice cooked with whole masalas and coconut milk (Thengai Paal).
