The ingredients needed to make Akkara-Adisil / Iyengar style Sweet Pongal:
- Make ready 1 cup Raw Rice
- Prepare 1/2 cup Moong dal
- Make ready 3 tbsps Ghee
- Prepare 500 ml Milk
- Get 200 grams Jaggery
- Get 1/4 tsp Cardamom
- Take pinch Saffron
- Take water
- Get 1 tbsp Ghee
- Get cashews
Sweet pongal is a delicious South Indian dish made with rice, moong lentils, ghee, jaggery or sugar, cardamoms and nuts. Sweet pongal is known as chakkara pongali in telugu & sakkarai pongal in tamil. Akkaravadisal Recipe is similar to sweet pongal but its so different and very tasty. Akkaravadisal (Akkara Adisil) is an Authentic Iyengar recipe.
Instructions to make Akkara-Adisil / Iyengar style Sweet Pongal:
- Wash and soak the rice and moong dal in a vessel for about 15 minutes.
- Take a kadaai, keep it on medium heat. Add 2 tbsps of ghee, and add only the soaked rice and moong dal, discard the water.
- Fry and sauté them until aromatic. Do not brown them.
- Transfer this to a container and add 3 cups of water. Pressure cook this for 6 whistles.
- Allow the pressure to release on its own.
- Take a heavy bottomed pot, keep it on medium heat.
- Pour in the milk and bring it to a boil.
- Take the cooked rice-dal mixture, mash it lightly with the help of a ladle and add it to the boiling milk.
- Allow this to boil and combine. Now add the jaggery. No need to make the jaggery into a syrup. Jaggery will cook in the milk.
- Add a pinch of saffron and a pinch of cardamom powder.
- Take the kadaai used to fry the rice and moong dal, keep it on medium heat, add in a tablespoon of ghee, add the broken cashews and fry them until golden brown.
- Pour this tempering to the milk mixture.
- Take this off the heat and serve it piping hot.
