Not many people are fond of karela because of its bitter taste. i make a karela dish once in a month as it is very good for health. Slice each piece of bitter gourd into fairly thin half-moon shape. Transfer them to a colander and sprinkle the salt over. Shake the bag or bowl so that the seasoning is distributed evenly over the pieces.
Instructions to make Fried Karela / Bitter gourd:
- Cut the bitter gourd in round pieces. Sprinkle 1 tsp salt over it. Keep aside for 15 minutes. It will help to reduce it’s bitterness.
- Wash the Karela under the running water. Squeeze it well.
- Take a wok. Heat oil. Add Karela in it. Fry on low medium heat for 4-5 minutes. Cover the lid.
- Add potatoes. Cook for 3-4 minutes. Now add onion and all the spices. Mix it well. Cook on medium heat until Karela and potatoes become softened. Stir it.
- Add grated jaggery. Mix it well.
- Turn off the flame. Transfer it in a bowl. Garnish with coriander leaves. Serve with chapati or Paratha.
