- Get 10 unripe bananas

- Wash the bananas nicely and the peel them as you cut into 3s or 4s depending on size.
- Put the bananas in a sufuria and let it boil for 5 minutes.check with the use of a fork by trying to pork it.
- In a separate sufuria put cooking oil allow it to heat up.
- Add chopped onions and stir as you add salt for a minute
- Add chopped tomatoes and cover it to cook for 2 minutes till it is fine.
- Add boiled bananas and stir for a minute as you add water then cover to summer for like 3 minutes.
- Put coriander and stir.
- Matoke is ready to serve with avocado.Enjoy.
Matoke is rarely cooked in may Kenyan households, something I believe is a travesty. The meal which is a staple meal in Uganda and Tanzania should be an. Matoke is steamed, wrapped in banana leaves then mashed. It can be served on its own or with stew. The dish is popular in Uganda and Rwanda.
