It is a mixed vegetable dish which is very unique in taste. By taste something is bitter Now fry potato, bitter gourd, drumstick, ridge gourd and and carrot one by one and set them aside.

Steps to make Swet potato shutkuni/shukto:
  1. In a kadhai add 2 tablespoons of white oil and as it heats add a pinch of panch phoron(a mix of 5 spices very popular in Bengali kitchen, preferably onion seeds, fennel seeds, fenugreek seeds, mustard seeds, cumin seeds) and a pinch of celery seeds (commonly known as Radhuni in Bengali).
  2. Then add 1 roughly cut sweet potato, 1 roughly cut brinjal, a cup of squared unripe banana, a cup of squared unripe papaya and fry them well, add salt as per your taste.
  3. On a blender blend a tablespoon of mustard seeds, 2 tablespoons of poppyseeds, a pinch of celery seed and blend well. Add this mixture to the vegetables and cook covered. Add half cup of water. Let it give a boil and transfer the bitter gourds fried and cover and cook till the vegetable tenders. You may add fried wadis(bori) if you want. I didn’t use them here. Serve hot with steamed rice.
